Potato baked in bacon

Not very healthy, but easy to prepare, tasty, satisfying dish. You can make potatoes in bacon with sauce in 45-50 minutes. Potatoes baked in meat “clothes” are more fragrant and juicier than usual. The main thing is to pre-boil the tubers so that they reach the condition before the bacon burns in a preheated oven.

Ingredients:

  • potatoes (preferably small or young) - 0.5 kg;
  • smoked bacon (or raw) - 250 grams;
  • cream (15-20% fat) - 50 ml;
  • mayonnaise (72% fat) - 1 tablespoon;
  • garlic - 1-2 cloves;
  • butter - for greasing the baking sheet;
  • greens (dill and parsley) - to taste;
  • ground black pepper - to taste;
  • salt - to taste.

Small young potatoes are ideal. Instead of smoked bacon, you can use raw meat, in which case the time spent in the oven (14th stage) should be increased to 20 minutes or baked in foil for 10-15 minutes. Cream is replaced with high-fat sour cream or natural yogurt without additives.

1. Rinse the potatoes under running water, put them in a saucepan without removing the peel, pour water over it.

2. Put the pan on medium heat, close the lid.

3. After boiling, reduce the heat and cook the potatoes for 30-35 minutes until the tubers are pierced with a toothpick.

The main thing is that the potatoes are not digested and do not begin to crumble into pieces.

4. With a tablespoon, transfer the boiled potatoes into a deep bowl, cool to a slightly warm state, then peel. If the potatoes are very large, cut into pieces that can be wrapped in bacon.

5. Cut the bacon into thin slices. The number of plates should be equal to the number of potatoes.

6. Transfer the bacon to a plate, wrap with cling film so that the meat does not dry out.

7. Finely chop the dill and parsley. Put chopped greens in a deep bowl.

8. Squeeze peeled garlic into greens. Add sour cream, mayonnaise, salt and pepper.

9. Mix the resulting sauce until smooth.

10. Pour the sauce into a bowl with potatoes, mix gently with a spoon so as not to damage the cooked tubers. Leave to marinate for 10-15 minutes.

11. Wrap the potatoes in pieces of bacon, it is advisable to fasten the edges of the meat with toothpicks so that they do not fall to the bottom of the baking dish.

12. Grease a baking sheet with butter. Post the blanks. Pour remaining sauce on top.

13. Preheat the oven to 180-190°C.

14. Bake potatoes with bacon for 7-10 minutes until golden brown and characteristic smell.

15. Remove the baking sheet from the oven, put the dish on plates and serve hot to the table
