  • Rinse and boil for 5 minutes. rice, put in a colander so that the water is glass, do not rinse, so that the gluten remains;
  • Mix meat mass with rice;
  • Form large hedgehog meat balls, place neatly in a slow cooker;
  • Fry onions and carrots in a pan, sprinkle flour on the frying, after 2 minutes of frying, pour tomato juice or tomato paste diluted in water, salt and pepper, fry the gravy mass for another 5-6 minutes;
  • Pour the hedgehogs in the multicooker with ready-made gravy, turn on the “quenching” mode for 1 hour.

Hedgehogs cooked in a frying pan

The easiest, “bachelor” way to cook hedgehogs is in a frying pan.

Recipe:

  • Minced meat (ready, chilled) - 500g;
  • Rice -100 gr.;
  • Egg - 1 pc.;
  • Tomato paste (2 tablespoons) or tomatoes (3-4 pieces);
  • Onion - 1 pc.;
  • Vegetable or butter - 50g;
  • Spices - bay leaf, pepper, salt;
  • Flour -1 tbsp;
  • Water for minced meat and gravy - 500 ml .;
  • Cream or sour cream -100 gr.

Technology:

  • Mix the meat with finely chopped onion, egg, pepper, salt, add the egg, beat the mass on the table;
  • Add rice to minced meat, boiled in advance for 5-6 minutes;
  • Blind large hedgehog balls;
  • Fry the onion in a pan, sprinkle with flour, throw in the parsley, pour over with tomato juice or diluted tomato paste;
  • If there is no tomato paste, ready-made tomato sauce, which already has gravy thickeners, is perfect;
  • You can add cream or sour cream to boiling gravy;
  • Gently put the hedgehogs into the boiling gravy, after 5 minutes reduce the heat, close the lid, simmer for 15-20 minutes.
  • Spices: salt, pepper, bay leaf;
  • Sour cream with a fat content of 20-25% - 200-300 gr.;
  • Onions - 3 pcs.;
  • Carrots - 3 pcs.;
  • Water - 1.5 cups.
  • Technology:

    • Rice is soaked and thoroughly washed in running water until transparent, until the "milky" color disappears;
    • Add to minced meat in turn: raw onion, finely chopped, salt, egg, black pepper, you can add 2 cloves of garlic for a bright and fragrant smell;
    • If the meat is fresh from the store, then when scrolling in a meat grinder, add raw onions, two eggs (only yolks are possible) and pepper, salt, a little water for juiciness, beat off the mass, like cutlets, mix with slightly boiled rice in advance;
    • We prepare gravy from fried onions with carrots and add sour cream to the gravy, salt, pepper, dilute with water for volume;

    When you don’t need to guess to make such a tasty and quick dinner, minced hedgehogs with rice in tomato sauce immediately come to mind.

    This dish is loved by everyone: both children and adults. Moms with imagination make the most amazing edible things out of hedgehogs, for example, hedgehogs under a sail, placing them on a platform of bread, and instead of a sail, they prick a sail from a thin layer of cheese on a skewer, plus, of course, a side dish of porridge or potatoes.

    "Hedgehogs" in the oven is one of the variations in cooking meatballs, only more tender and original when served. Small eaters especially like this dish, because the meat balls resemble “hedgehogs”, the main thing is to use long rice grains, not round ones. But minced meat can be twisted from any meat or fish.

    "Hedgehogs" are excellent because they do not require a side dish, as they already contain rice. Also, cereals do not need to be boiled, as for meatballs, which makes the dish easy to prepare.

    Ingredients:

    • 425 g minced meat;
    • 325 g long grains of rice;
    • two onions and one carrot;
    • two tablespoons of sour cream;
    • two spoons of tomato paste;
    • 85 g of cheese;
    • spices.

    Cooking method:

    1. We do not boil rice grains, but simply put them in minced meat along with chopped onion and seasonings. For viscosity, you can drive one egg.
    2. We make “hedgehogs” from minced meat and transfer them to a baking dish.
    3. For the sauce, mix chopped onions and carrots, put a fermented milk product, tomato puree and pour hot water (broth). The liquid must be added in such an amount that the sauce completely covers the meat preparations.
    4. We send the "hedgehogs" in the sauce under the foil to the oven for 45 minutes (temperature 180 ° C).
    5. 10 minutes before cooking, remove the foil and sprinkle everything with grated cheese.

    Cooking with gravy

    In the oven, hedgehogs are necessarily baked with appetizing gravy. For the sauce, you can take sour cream, tomato ketchup or pasta, any seasonings and vegetables. For meat "hedgehogs" it is better to use mixed minced meat, but not pure pork, so that the dish does not turn out so fatty.

    Ingredients:

    • half a kilo of mixed minced meat;
    • one onion and one carrot;
    • two eggs;
    • half a glass of rice grains (long);
    • seasonings;
    • two tablespoons of tomato juice.

    For gravy:

    • a spoonful of sunflower oil;
    • bulb;
    • two glasses of tomato juice;
    • spices, herbs.

    Cooking method:

    1. Add diced onion, grated carrots, spices to the minced meat, and also beat in two eggs, pour in the tomato juice and add the rice grains, knead, sculpt the balls and put in the mold.
    2. In a frying pan with oil, we pass the chopped onion until bright, then pour in the tomato juice, add spices and aromatic herbs. We warm the sauce for three minutes and fill it with our “hedgehogs” halfway.
    3. We cover the form with the contents with foil and send it to the oven for 40 minutes, then remove the foil, add the sauce and simmer the dish for another 20 minutes.

    In sour cream sauce

    In PP sour cream sauce, hedgehogs are very tender and ideal for baby food, the main thing is not to use fatty meat for the dish. For cooking, we take any recipe (see above) for meat hedgehogs and add two cups of sour cream to the list of ingredients.

    Cooking method:

    1. We make koloboks from minced meat and put them in a mold.
    2. We take sour cream and half a glass of water, if there is, then broth, stir and pour over the resulting mixture of “hedgehogs”.
    3. We send the dish to the oven for half an hour (temperature 200 ° C). The sauce thickens under heat and is absorbed into the meatballs, thereby giving them a delicate taste.

    Meat hedgehogs in tomato sauce

    If you do not like sour cream, then you can make "hedgehogs" in tomato sauce. For filling, you can use fresh vegetables, tomatoes in their own juice, any sauce, pasta or ketchup.

    Ingredients:

    • 680 g of mixed minced meat;
    • 86 g of rice grains;
    • carrot, onion;
    • juicy big tomato;
    • a spoonful of tomato puree;
    • seasonings, a glass of water.

    Cooking method:

    1. Mix minced meat with cereals, chopped onions, carrots and seasonings, make balls and put in a mold.
    2. We peel the skin from the tomato, grind the pulp on a grater, put the tomato puree, seasonings, pour in a glass of water.
    3. Pour the resulting sauce over the “hedgehogs” and bake in the oven for 50 minutes (temperature 180 ° C).

    Chicken meat is considered a dietary product, which makes dishes from it less high-calorie and healthy. Named such meat, many mothers use for dishes to feed their little gourmets. It can also be made from turkey.

    Ingredients:

    • a kilo of minced chicken;
    • a glass of rice grains;
    • three bulbs;
    • one carrot.

    To add some variety to the recipe, you can replace rice with buckwheat. Of course, the balls will no longer look like "hedgehogs", but it turns out very tasty.

    Ingredients:

    • 750 g of any minced meat;
    • 145 g of buckwheat;
    • one raw egg;
    • three cloves of garlic;
    • bulb;
    • two bowls of sour cream

    Cooking method:

    1. First of all, we boil the cereal, but we don’t overcook it much, since the dish will still be baked with us.
    2. Pour the cooled buckwheat into minced meat together with chopped onion, pressed garlic, egg and spices.
    3. We form balls from minced meat and shift their shape.
    4. We put a little salt and pepper in sour cream and pour balls over it, cook the dish in the oven for 40 minutes (temperature 180 ° C).
