Recipe 1: Vareniki with cherries

Cherry dumplings can be steamed or boiled in boiling water in the traditional way. In this recipe, we will prepare the dough for dumplings, which we will then cook.

Dough for making dumplings in water

  • Flour 250 grams
  • Boiling water 200 ml
  • Sunflower oil 2 tablespoons
  • Soda ½ teaspoon

  • Cherry 500 grams
  • Sugar to taste

Cooking method:

  1. Knead the dough for dumplings. To do this, mix the flour sown through a sieve, soda and salt. Heat the water, add oil to it and pour into the flour. Stir first with a spoon while it is hot, and then, when it has cooled, mix it with your hands. The dough for dumplings should be elastic and soft, similar to dough for chebureks.
  2. Sprinkle the surface of the table with flour and roll out the dough with a rolling pin to a layer about 2.5 centimeters thick. With a cup, make circles from the dough.
  3. Separate the cherries from the stone and put four cherries and a teaspoon of sugar in the middle of each circle. Adjust the amount of sugar according to your taste.

Cooking method:

  1. Pour kefir into a deep bowl and add soda and salt to it. Stir.
  2. Flour sifted through a sieve, add a thin stream to kefir, stirring it with a spoon.
  3. Knead the dough, adding gradually to the mass of flour. The dough should be very soft. This is the secret of delicious dumplings - the softer the dough for them, the more airy the dish will turn out to be.
  4. Tear off a piece of dough from a lump of dough, make a sausage out of it with your hands and cut into pieces.
  5. Turn each piece by hand into a round layer about 1-1.5 centimeters thick. Dust your hands with flour as you work with the dough to keep it from sticking.
  6. Put 4-5 cherries in the middle of the cake and sprinkle sugar to taste. Pinch the edges of the dumplings.
  7. Pour water into the pan, about halfway, tie the cheesecloth on top so that the edges do not hang (otherwise they will light up), and cover with a lid.

Recipe 3: Vareniki with cherries and strawberries in a double boiler

Another recipe for dumplings with cherries, also steamed. You will need a multicooker.

Dough for steamed dumplings

  • Yogurt 250 ml
  • Flour 300 grams
  • Soda ½ teaspoon
  • Salt to taste

For filling:

  • Cherry 200 grams
  • Strawberries 200 grams
  • Sugar

Cooking method:

  1. Pour yogurt into a deep bowl, add salt and soda, mix.
  2. Add a thin stream of flour to the curdled milk, mix. Knead the dough until it is thick and soft.
  3. Divide the resulting lump of dough into several parts. Make a sausage from one part, cut it into several parts. Flatten each part with your hand into a cake, about one and a half centimeters thick.
  4. Wash strawberries and cherries, remove pits from cherries. Cut strawberries into pieces and mix with cherries, sprinkle with sugar.
  5. Spoon the fruit filling into the center of each pastry and pinch the edges as tightly as possible.
  6. Pour water into the double boiler, grease the bottom of the bowl with vegetable oil, and put dumplings there at a short distance from each other. Cover the steamer with a lid and cook the cherry and strawberry dumplings for about 7 minutes.
