Chicken carbonate

Ingredients:

  • chicken fillet - 1 kg,
  • lemon - 1 pc.,
  • potato starch - 1 tsp,
  • baking soda - 1 tsp,
  • wheat flour - 1 tbsp.,
  • salt - to taste,
  • vegetable oil - for frying.

Cooking process:

Chicken fillet must be carefully processed before cooking, namely: cut off all remaining films and fatty layers, and remove cartilage and bones, if any. Then we wash the fillet well and let it lie down so that the water is glass. Cut the meat into not very large pieces, about 3x3 cm.


We put the meat in a deep bowl, season with salt and soda, which we extinguish with lemon juice. We mix everything well.


Now crush the meat with potato starch, mix again and let stand for 15-20 minutes.


Heat vegetable oil in a frying pan. Each piece of marinated fillet is thoroughly rolled in flour on all sides.


We spread the pieces of meat in hot oil and fry first over medium heat on one side until a golden crust appears.


Then turn over the carbonate from the chicken and fry under the lid over low heat until cooked through.


During the frying process, the pieces of meat swell and become very juicy and tasty. Put the finished carbonade on a plate so that the glass is excess oil. We decorate the pieces of meat with herbs and serve.
