One of the most homemade dishes are meatballs, which we were treated to in kindergartens and at home in childhood. Everyone remembers how our grandmother cooked delicious meatballs. And why don't you cook these fragrant meat koloboks for your children? After all, to cook meatballs you do not need special skills and abilities, everything is quite simple!

Meatballs are koloboks made from meat, fish or some other minced meat. In the cuisines of many nations there are dishes resembling meatballs, but the roots of this dish go back to Sweden. Most often, boiled rice, cabbage, less often barley or beans are added to the meatballs. Depending on the national cuisine, the additives in minced meat for meatballs can be different. Meatballs can be steamed and this is the most useful option for their preparation, they can also be stewed in sauce, fried in oil, baked in the oven.

The simplest recipe for making baked meatballs in tomato sauce is presented in our step-by-step MK, in other recipes the principle is the same, only the minced meat additives are slightly different. Cook with us and experiment with flavors.

Meatballs with rice in tomato sauce in the oven

For cooking you will need the following ingredients:

Ingredients:

  • Minced meat (preferably from two types of meat) - 0.8 kg,
  • Onion - 1 piece,
  • Egg - 1 piece,
  • Rice - 4 tbsp. spoons,
  • Tomatoes (large) - 3 pieces or homemade tomato juice,
  • Sour cream - 100 g,
  • Wheat flour - 1 tbsp. spoon,
  • Salt and spices to taste
  • Vegetable oil.

Cooking process:

To cook meatballs in tomato sauce in the oven, boil rice until half cooked. To do this, it should be washed and poured with water, add salt and put on medium heat. Boil the rice until half cooked and drain the water. It is preferable to choose round varieties of rice.

In the prepared minced meat, add pre-peeled and chopped onions, salt and black pepper to taste, boiled rice, mix everything.

When I have thick homemade tomato juice (which is made from mashed tomatoes) from homemade preparations, I do not cook sauce for meatballs. I just mix it with sour cream and add spices to taste. In the summer I use fresh ripe tomatoes, rubbing them directly with the skin on a grater. With the same success (but not with taste!) You can use ketchup diluted with boiled water or tomato paste.

And tomato sauce for meatballs can be prepared with vegetables. To do this, peel the carrots, onions, then grate the carrots on a fine grater, and finely chop the onion. Then fry the onions and carrots in a frying pan with the addition of vegetable oil until the onions are transparent. Tomatoes should be cut finely, but it is best to grind them in a blender or grate them on a fine grater. Next, mix the fried vegetables with chopped and tomatoes, add salt and spices to taste. Mix everything and simmer in a pan for no more than 10 minutes. At the end, add flour and mix thoroughly.

We roll up meatballs from the rested minced meat, put them in a deep baking dish, greased with vegetable oil.

Then pour the prepared meatballs with tomato sauce. The photo recipe for the gravy uses grated tomatoes mixed with sour cream and a spoonful of flour, so no other vegetables are listed in the ingredients.

The form with meatballs is covered (sealed) with foil. We send the form to the oven preheated to 200 degrees Celsius and cook the baked meatballs for 25 - 30 minutes. If you cook meatballs without foil, then you need to pour sauce over the koloboks several times during cooking so that they do not dry out.

Serve the finished dish with vegetables or a side dish. Most often, meatballs are associated with boiled pasta or mashed potatoes.

Meatballs in the oven with cheese

Meatballs with the addition of cheese are very fragrant and tasty, and the tomato sauce in which they are cooked will add extra juiciness to the meat balls. Cheese goes into minced meat (which we don't add rice to!), not for a nice golden crust.

To cook meatballs with cheese in the oven, you will need the following ingredients:

  • Minced meat - 500 grams,
  • Cheese (any) - 150 - 200 grams,
  • Egg - 1 piece,
  • Onion - 1 piece,
  • To prepare the sauce:
  • Fresh tomatoes (large) - 5 pieces,
  • Sugar - 1 teaspoon,
  • Salt and ground black pepper to taste.

Cooking meatballs with cheese in the oven

First, let's prepare minced meat for meatballs. To do this, add onion to the prepared minced meat, which was previously finely chopped. Cheese should be grated on a medium grater, then added to the minced meat, where the onion was previously sent. We drive in a raw egg. Also add salt and ground pepper. We mix everything, lightly beat off and, covering with a napkin, leave to rest.

Now let's make the sauce. To do this, cut the washed tomatoes into two parts and rub them on the smallest grater, in the process the pulp will be rubbed, and the skin will remain in your hands, very convenient. Next, add granulated sugar, salt and black pepper to the tomato mass. Various dried herbs and spices can be added to taste. Then pour the tomato mass into the pan and simmer for 10 minutes in order to evaporate the excess liquid.

After that, you need to roll the meatballs from the minced meat and, putting them in a baking dish, pour the tomato sauce. We send it to the oven for 30 minutes, cook at a temperature of 200 degrees.

    Meatballs with mushrooms in tomato-sour cream sauce in the oven

To prepare mushroom meatballs, you will need the following ingredients:

  • Minced meat - 400 - 500 grams,
  • Fresh champignons - 200 grams,
  • Rice - ½ cup
  • Onion - 1 piece,
  • Garlic - 2 cloves,
  • Water - ½ cup,
  • Tomato juice - 1 cup
  • Wheat flour - 2 tbsp. spoons,
  • Sugar - 1 teaspoon,
  • Salt and ground black pepper to taste
  • Sour cream - 3 tbsp. spoon,
  • Fresh greens.

First you need to boil the rice until half cooked, then rinse it and cool.
