Pike fish cutlets are a tasty and very healthy dish for every day, which, it is worth noting, both adults and children love to eat. Meanwhile, as practice shows, not all housewives can make such a treat correctly. Some fish cutlets turn out too bland, others not juicy, and others with bones.
Ingredients
- You need to take for cooking:
- Pike fillet – 1 kg.
- 2 onions.
- Egg.
- 20-30 gr. butter
- Flour for dredging and vegetable oil for frying.
Preparation
- Grind the pike fillet in a meat grinder, and if you take a whole fish, you should wash it, clean it of fins, skin and bones, and only then grind it. You should turn the minced meat 2-3 times at least, this way it turns out to be the softest and most tender.
- Add chopped onion, salt, spices and egg to the minced meat. By the way, the onion can be either chopped or passed through a meat grinder or grater.
- Melt the butter, pour it into the rest of the products, carefully beat your mixture with your hands and put it in the refrigerator for an hour.
- Heat the sunflower oil in a frying pan, soak your hands in water, and form beautiful cutlets.
- Roll the resulting products in flour or breadcrumbs and place in a frying pan.
- Without turning down the heat, fry your products until crusty on one and the other side, then cover with a lid, turn the heat to low and cook for about 10 minutes. By the way, I already talked about the secrets and tricks of how to properly fry fish cutlets in a previous article.
- If you want to get a more tender dish, then 5 minutes before it is ready, pour 3-4 tablespoons of milk into the pan and simmer over low heat.
Homemade recipe for pike cutlets in the oven with gravy
Ingredients
- A kilogram of pike.
- Spices for fish.
- Bread crumb – about 150 gr.
- Bulb.
- Grated cheese – 50-70 gr.
- Two eggs.
- Salt.
- Glass of water.
- Sautéed carrots and onions – quantity to your taste.
- Two false st. thick tomato paste.
- Two tablespoons of fish broth (you can just use salted water).
- Three spoons of sour cream.
Preparation
- Add to the minced meat, bread soaked in water, chopped onions, eggs, spices, cheese, knead and leave in the refrigerator for 20 minutes.
- We make cutlets, fry on each side in a hot frying pan for 2-3 minutes.
- Sauté carrots and onions.
- In a bowl, mix all the ingredients for the sauce.
- Place your cutlets on a baking sheet, sprinkle with sauté and pour in the sauce, and send to cook at 180 degrees for 20 minutes.
- Serve the finished cutlets piping hot with any side dish you like.
The most delicious pike cutlets with lard
Ingredients
- 1.5 kg. pike meat.
- 200 gr. lard
- 2 onions.
- Two eggs.
- Two slices of loaf.
- Half a glass of cold fish broth or water.
- Any spices you like, salt.
- For frying, a little sunflower.
Preparation
- Grind the fish meat into minced meat using a kitchen unit or an ordinary meat grinder.
- Add chopped onion, eggs, lard twisted into minced meat (alternatively, lard can be finely chopped into cubes).
- Soak the loaf in broth or water for a few minutes without squeezing, add to the mixture, add seasonings and salt, knead the mass until smooth.
- Pour oil into a frying pan and heat it until it begins to sizzle a little.
- Make neat cutlets with your hands, fry them until golden brown without a lid, then cover the lid, reduce the heat to low and simmer for 5 minutes.
- Formed products can be breaded before frying in flour passed through a sieve or unsweetened breadcrumbs. Instead of a loaf according to this recipe, you can add 1.5 tablespoons of semolina.
- In our case, any vegetable salad, rice, or crushed potatoes are suitable as a side dish.
Tender and juicy pike cutlets with cottage cheese
What products will you need?
- Pike – 500 gr. (weight indicated for finished meat without bones);
- Cottage cheese of any fat content, not wet – 220 gr.
- Small eggs - 2 pcs. or one.
- Garlic – 2 cloves.
- Unsoftened butter – 100 gr.
- 2 spoons of oat flakes.
- Two tablespoons of sifted flour.
- Spices to taste.
Preparation
- In this case, the minced meat does not need to be passed through a meat grinder. Just chop the fish finely with a knife, and then mix it with cottage cheese, eggs, spices, salt, oatmeal, grated onion and garlic.
- Cut the butter into small pieces, thin slices.
- Form into cutlets and place a piece of plum in the middle of each. oils
- Dip the ingredients in flour and fry in a frying pan until nicely browned on both sides.
- Before serving, the fish and curd dish can be sprinkled with fresh dill or green onions.

Just five to six minutes on each side and a wonderful, satisfying and most importantly very tasty dish is ready.
