  • Two to three tablespoons of olive oil.
  • 20 g butter.
  • One tablespoon of granulated sugar.
  • 250 ml dry white, semi-dry wine or dessert wine (madeira, port, sherry).
  • One coffee spoon of ground dry ginger.
  • One coffee spoon of grated nutmeg.
  • One teaspoon ground black pepper.
  • 1 teaspoon ground fenugreek (optional if available)
  • Salt.

How to cook

We prepare the liver, as in previous recipes. In a frying pan, heat the butter in half the olive oil indicated in the recipe, put the chicken liver. Cook for five to six minutes until a beautiful "fried" color. We put spices, salt.

Cut the peeled onions into quarters. Small ones - in half, and "kids" can be used as a whole. In a second frying pan, heat the remaining olive oil, throw in the onion.

We fry on a medium flame of a burner with constant stirring until a color is achieved, as in the photo.

Increase the heat, add sugar, stir quickly, pour in a third of the wine, cook until the wine has completely evaporated. We repeat the operation three more times until we use all the wine. Spread the onion in caramel on the fried liver, stir, simmer together for a couple of minutes.
