Quick and tasty casserole of cottage cheese and pita bread. A bit like pancakes with cottage cheese or pancakes, but requires much less effort.

Products for casseroles:

  • 1 lavash
  • 2 packs of cottage cheese 200 gr each (total 400 gr cottage cheese)
  • 2 eggs (if the eggs are large, or the cottage cheese is watery, then 1 egg is enough)
  • 100 gr sugar
  • 1 pinch of vanilla
  • Butter for greasing the pan

Sugar had to be photographed separately because I forgot to add it to the products chosen for the casserole 🙂

In general, it is better to add sugar and vanilla, focusing on your preferences, because someone likes it sweeter, but someone does not.

1 Making the stuffing

Mix cottage cheese with sugar, vanilla and eggs. Add 1 egg first, mix and look at the consistency of the filling. If it turned out to be watery, then the second egg is no longer needed.

2 Put the stuffing on the pita bread

We unfold the pita bread and put half of the filling on the half of the pita bread. So that the filling does not flow out, I advise you to tuck the edges.

3 Fold the pita bread

Fold the pita bread in half. If it seems to you that there is not enough filling around the edges, then slightly open the edges and add a couple of tablespoons of cottage cheese there.

4 Add the rest of the filling

Again, spread the filling on pita bread. This time you can spread it all over the pita bread, at least it’s more convenient for me.

5 Folding pita bread

Fold the pita bread in half again.

6 Cut pita bread

I usually cut the resulting blank in half. I put one part in a frying pan, and wrap the other in the paper on which I made the casserole, and put it in the refrigerator. Then, at any time, you can get it and bake it. Do not press too hard on the knife so that all the cottage cheese does not flow out of the pita bread.

7 Fry pita bread

We heat the pan, grease it with butter, put the casserole and cover with a lid.

Fry over medium heat, covered. You don’t need to fry the pita bread too much, it’s enough to hold it for 5 minutes on each side. If the filling leaked out a little during cutting, then when frying, the sugar from the filling may burn a little. This is not critical, and can always be removed after frying.

8 Waiting 10 minutes

After frying the casserole, remove the pan from the heat and wait another 10 minutes without removing the lid. This is necessary so that the fried pita soaks and becomes soft. But if you prefer crispy dough, skip this step.

  • 1 sheet of thin lavash (size 70×55cm),
  • 250~300g cheese,
  • 1.5 cups of kefir,
  • 2 eggs

Chatter eggs with kefir.
Break the pita leaf in half.
Pour 2~3 tablespoons of kefir mixture onto half a sheet and spread evenly (it is convenient to spread with a culinary brush).
Lay in a mold with a diameter of 20 cm so that the pita bread follows the contours of the mold.

Do the same with the second half of the pita bread - spread and put in a mold.
Pour about 1/3 cup of kefir mixture.
Mix the remaining kefir mass with grated cheese.
Put half of the cheese mass into a mold and close it with the hanging ends of the top sheet of pita bread.

Lay out the second part of the cheese. Close the edges of the bottom sheet of pita bread.
Coat the top with cast kefir mass.

Put in the oven at t=200~220°C until the surface is browned (~10 minutes).

Recipe 2: Lazy Cheese and Lavash Pie (with milk)

proportions are given for a form 20 × 30 cm

  • 2 packs of 200 g of thin Armenian lavash (we sell it in the form of rolls, I buy it, it’s very convenient to put this “footcloth” in the form later)
  • 300 g cheese
  • 2-3 eggs
  • 2-3 garlic cloves
  • milk

Grate the cheese on a coarse grater, add eggs, chopped garlic (it is possible without, but it is spicier with it), mix, gradually pour milk into the mixture to make a thick cheese "dough" (like on pancakes). The filling is ready.



Put a sheet of pita bread in a baking sheet, grease with filling,

again pita stuffing, etc. , until we use all the pita bread and the filling. The top should be a layer of pita bread.

Bake at 180 * C for about 15 minutes (this time is enough for the cheese to melt and seize, and the edges of the pie become crispy.

  • 2 large sheets of thin Armenian lavash,
  • 200 g of any hard cheese,

Recipe 4: Lavash and Cheese Pie with Mayonnaise

  • 1 pack of thin lavash,
  • 4 tbsp. mayonnaise spoons,
  • 400 g cheese
  • 1 glass of milk
  • 2 eggs,
  • 30 g butter

Lubricate the form in which you are going to bake the cake with butter. Preferably thicker. Cut lavash sheets to size.

I got seven round cakes. But, if you want to make the cake more magnificent, then you can take two or three packages. Then the mass of ingredients will naturally increase. Cheese grate on a coarse grater.
