How to bake:

You already know how to make shortcrust pastry from previous recipes: sift flour into a bowl, add salt and sugar, cut cold butter into pieces and grind everything with your hands into crumbs.


Then, a little bit, half a spoon, pour in water and collect the dough into a lump, as soon as it stops crumbling and sticking together - there is enough water.


We press a ball of dough to make a disk - then it will cool more evenly and it will be easier to roll out - and, wrapping it in a bag, put it in the refrigerator for an hour.


Wash the apricots for the filling and remove the pits. Just before baking, mix the fruit with sugar and starch. It is not worth preparing the filling before, as the fruit will release the juice, and it will become too liquid.

Turn on the oven, let it warm up to 200 C. Melt a piece of butter in a pan, 20 grams. As soon as the butter starts to turn golden, remove from heat and spread the apricots. You can mix them with starch and sugar right in the pan.


After taking the dough out of the refrigerator, put it between two sheets of parchment and roll it into a cake according to the diameter of the pan.


We remove one sheet of paper, and with the help of the second we transfer the cake to the apricots and lay it on top of the filling.
