You may not believe me, but I have never baked not only shortbread, but even simple butter cookies. Yesterday, in search of "something simpler", I dug up a cookie recipe from Sony's accountant buxgalter_sofi and got down to business. I didn’t regret it for a minute - and it’s nowhere easier to cook, and it turns out very tasty.

It’s just that Sonya and I disagreed on the quantity - she makes 35-45 pieces, and I have about 25. Apparently, she cut them thinner.

To make cookies, Sonya advises taking

170 g soft butter
60 g (1/2 cup) powdered sugar
50 g (1/4 cup) sugar
1 teaspoon vanilla or 10 g vanilla sugar
1 egg
1.5 tablespoons of sour cream
zest of one lemon
330 g (2+1/3 cups) flour
70 g (1/2 cup) cornstarch*
100 g pistachios (dry and crush into large pieces)
75 g dried cranberries or cherries

I didn’t have corn starch, and naively I replaced it with potato starch.
I used walnuts instead of pistachios.

2 baking sheets lined with baking paper
I only had one pan.

Oven temperature-170 gr
Baking time 20 min.



Beat butter, powdered sugar, vanilla sugar, zest, egg and sour cream with a mixer until creamy for a couple of minutes.

Pour flour and starch into the resulting mass and knead for another 2 minutes.

She divided the dough into 2 parts.
I spread the dough on cling film and rolled 2 sausages, approximately 20 cm long. I put the sausages in the freezer for 1 hour.

From the frozen dough, I cut cookies (1.5 cm wide) with a sharp knife and laid them out on a baking sheet.




Baked in preheated oven for 30 minutes.

Cool the finished cookies on a wire rack.

Marginal notes.
When warm, the taste of starch is very clearly present, but when the cookie cools, this unpleasant moment disappears. The whole thing, apparently, is my stupid replacement for potato starch. You need to look for corn. In general, the recipe is excellent, and as always, many thanks to Sonya !!!

First you need to prepare the base of cookies with cranberries - shortbread dough according to the usual classic recipe. Such a dough can often be found in recipes called "1-2-3", i.e. for it you need to take 1 part of sugar, 2 parts of butter and 3 parts of flour, and for binding - an egg.


Cold butter rub into crumbs with sugar and flour.



Add egg and orange zest.



Mix everything very quickly, collecting in a ball - so that (if possible) do not let the butter melt.
The resulting dough may even seem heterogeneous, that's okay. Wrap the dough in cling film and refrigerate for about an hour.



For the filling, you need fresh cranberries, but you can also use frozen ones, but you will need to completely defrost it and drain all the juice, otherwise the filling will turn out to be too liquid.



Now everything is simple at all - you just need to chop cranberries, nuts and sugar together in a blender.



It remains only to "collect" everything together. I advise you to divide the dough into two parts.

Roll out the dough into a rectangle 3-5 mm thick. For convenience, you can do this using cling film (or paper).



Spread the hazelnut filling evenly over the entire surface of the dough.



Roll up.



Wrap the resulting rolls again in cling film and send to the freezer for at least 4 hours.
In the freezer, a "raw" roll can be stored for up to three months. When you decide to bake cookies, you need to take out the frozen semi-finished product and let it lie down for a bit and warm up a little (so it will be easier to cut) while the oven heats up to 180 degrees.

  • 100 grams of butter;
  • Half a teaspoon of vanilla sugar;
  • 1 egg;
  • 240 grams of wheat flour;
  • 90 grams of powdered sugar;
  • 1 orange;
  • 0.25 teaspoon of baking powder;
  • 0.25 teaspoon of soda;
  • 50 grams of fresh cranberries;
  • 200 grams of sugar;
  • 0.25 teaspoon of soda.

Everything is prepared and already from the list of ingredients it is clear that we will have not just cookies with cranberries, but also with the addition of an orange. By the way, if there was no orange, you can take a tangerine instead. Also, it should be noted that the cookies turn out to be quite sweet, and for those who do not like too sweet, since the cookies are still sprinkled with powder at the end, you can slightly reduce the amount of sugar in the dough.

Step by step recipe

  1. We take a suitable container and first send the butter into it. We first take it out of the refrigerator so that it is slightly softened at the time of cooking.
  2. After that, we need to grind the butter with sugar. Next, add salt and prepared vanilla sugar to them.
  3. Looking at the recipe, we continue to cook. We take an orange, wash it well and peel it. We need exactly the zest and a tablespoon orange juice. Add all this to the oily mass and mix well.
  4. Next, beat in the egg. Then, we need to sift the flour, after mixing it with soda and baking powder for dough. Now, we need to mix all this thoroughly.
  5. Well, now we need cranberries. Our recipe provides that we will use fresh, but you can make cookies with dried cranberries, this is already an amateur and for the presence of cranberries in the house, or rather its type. So, take a cranberry, wash it well and cut it into two parts. After, add to the dough and mix.
  6. Mix everything well and our dough is ready.
  7. We begin to form our cranberry cookies. We take a piece of dough, roll it into a small ball, like a walnut. When the ball turned out, roll it in powdered sugar. Thus, we act with each future cookie.
  8. We prepare a baking sheet, cover it with baking paper and lay out our balls. Don't put them too close to each other, leave about 4 centimeters between them so that they remain just as beautiful and do not stick together.
  9. We put the baking sheet with the future dessert in the oven, which was preheated to 180 degrees. The dish will be baked for no more than 25 minutes, it may also depend on the oven. In some cases, this process may take up to 10 minutes. Follow the cooking progress, but you don’t need to overdry it, it should remain pale and, as a result, soft.
  10. As soon as the dish is ready, put it on a dish and treat everyone.

Here is such an interesting and completely simple recipe, which is absolutely not the only one. There are many cooking options, such as shortbread with cranberries, the dough will be cooked differently here. And there are options for changing the filling, we supplemented cranberries with orange zest, or you can make cookies with walnuts. Nuts with cranberries are combined very unusually, and most importantly, delicious.
