This year we placed a photo of homemade preparations on our traditional calendar. Many of you have asked our staff questions about the herbs and other products depicted here. We decided to meet with the author of this composition, Olga Ablisimova, and ask her about where it was collected and how it was used.

Olga, your winter preparations are depicted on the calendar. Everything looks bright and appetizing. Please tell us about your hobby.

For me, going for berries and mushrooms is a pleasant pastime in nature, when you can admire the beauty of forests and fields and relax your soul. You always want to stop time, prolong the memories of summer and feel the smell and taste of forest aromas on cold winter evenings.

This is where my interests coincided. I love to experiment, try different ways to preserve nature's gifts, mix everything and get new original recipes. I discovered drying. It’s nice to see the transformation of herbs and berries, vegetables and fruits; choosing the cutting method, drying time, and type of finished product for each type is also important. And what a scent they acquire! It’s just wonderful that my family and my friends appreciated my work and inspired Alexander Blokhin to create such a beautiful still life photo.

Everything you see on this calendar are gifts from the Mordovian land, namely the Zubovo-Polyansky region. Drying vegetables is one of the oldest methods of preparation. It is simple and accessible, while allowing you to save an almost complete set of useful elements. At first I dried the herbs on the balcony, simply hanging the bunches in a dark place. But it didn’t always turn out well. They were not completely dried and therefore were not preserved until spring. One day I saw an electric dryer in a store. Moreover, its set included interesting trays, for example, for marshmallows. Of course, I bought it, which I don’t regret at all.

After all, if canning requires a large cabinet or pantry, and freezing requires a spacious refrigerator, then this is not required for dried products. Dried preparations are greatly reduced in volume. I store this at home, in an ordinary apartment, in glass jars under vacuum lids.

The first thing you notice is the blue flowers in the jar. What is this?

This is the color of Ivan tea, many have heard about it. Until the beginning of the 20th century, in Rus' they brewed it and drank it as a traditional hot drink. We collect it near the village of Shiringushi in the Zubovo-Polyansky district. Although it grows in Atemara, Kochkurovo, and Bolshebereznikovsky district. It turns out that it contains a lot of vitamin C. Ivan tea improves tone and gives strength. By the way, the grass is also an excellent honey plant. Therefore, when brewed, tea acquires the aroma of honey. Many of us are accustomed to drinking tea with sugar. This drink is good without it, as it is sweet and aromatic in itself.

In the basket, if I'm not mistaken, is St. John's wort?

Yes, this is a fragrant herb - St. John's wort. There is no disease that she would not treat. People say that this is a herb for 99 ailments. Its golden flowers are pleasing to the eye, and its pleasant tart taste brings pleasure.

The other herb in the photo is sage. At home we usually use it when our throat hurts. In addition, sage can serve as a wonderful fragrance for sachets. I put it in linen bags and put it in the closet with my things.

The photo is decorated with scattered wild strawberries. Everyone knows the benefits of this berry. Are dried strawberries also healthy? What are the features of its storage?

Yes, of course, the beneficial properties of both fresh and dried strawberries are inexhaustible. I even specifically looked in the books to see what this berry contains, and I was surprised. In addition to their high content of vitamin C, it contains carotene, vitamins B1, B2, folic acid, iron, and is also a source of mineral salts. I usually brew it into tea with other herbs or just add it to black tea. It quenches thirst well.

Previously, dried strawberries were stored in linen bags, but this did not save the berries from all kinds of pests and foreign odors. Today you can find all kinds of storage jars in stores. Personally, I store berries, like many other things, in glass containers under vacuum lids. It can remain under such covers for a long time, does not deteriorate, and does not absorb “unnecessary” odors and moisture.

The strawberries and rose hips that you see on the calendar were collected far from highways and railways, also in the Zubovo-Polyansky district. By the way, do not forget about the beneficial properties of rose hips, which also found its place on the calendar. I like to brew it in a thermos. Let it sit overnight, and the next day you can drink it. This drink has a wonderful sweet and sour taste and is high in vitamin C.

The bright jar with tomatoes and onions attracts attention. It seems that now few people dry slices of carrots, beets, onions and tomatoes for the winter...

And in vain. Although initially mushrooms, herbs and berries were preserved in this way. However, modern methods make it possible to dry vegetables as well. Products can be stored for several years without losing their beneficial properties. In addition, it is also convenient, for example, when you are short on time or you are tired, the process of preparing dinner is greatly simplified if you have dried vegetables on hand. Dried fruits can be consumed either dried or reconstituted. To do this, you just need to add one glass of water to one glass of fruit.

Separately, I would like to tell you about homemade vegetable seasoning, which can decorate any dish. I add it everywhere: to soups, porridge, salads, omelettes, stews, etc. It is easy to prepare. You dry herbs (onions, parsley, dill, celery, etc.) and vegetables as they ripen. The composition of the seasoning can be anything, it all depends on what grows in your garden. I dry everything in an electric dryer. Then all the ingredients are mixed. Then they can be ground in a coffee grinder to obtain a fine fraction. Or you can use a wooden masher, then the ingredients will remain larger and in the dish they will take the form of pieces of vegetables and herbs.
