My friend, who recently returned from a trip to the south of France, brought this recipe with her - it is very simple, and the cake is light and eaten in an instant :) To be fair, it should be noted that in the original it is prepared only with apples and exclusively on high-quality butter, but the adapted summer version is unusually good! Especially in the berry season - with some apples we will cook in the winter :) Enjoy watching!

For the test we need:

100 g of butter or margarine - for an amateur: butter gives more dense structure dough, margarine is more crumbly. This time I made it with margarine.

2 cups of flour

30-40 ml of water, depending on the flour, add water little by little and knead - the dough should grab and become elastic.

Margarine or butter must be softened

This is how beautiful the dough should become - it kneads very quickly, especially with four hands :)

We spread the dough in a greased form and level it over the entire surface, do not forget to form the walls - the berries give juice

Cut the apples thinly and spread them thickly on the bottom

At this stage, the French stop, sprinkle with powdered sugar and send to the oven. And we will add a variety of summer berries - oh, and colors, oh, and flavor !! I have here: blueberries, black and red currants, raspberries and cherries. In addition to blueberries, all the berries are hand-picked yesterday at my mother's dacha :) Beautiful, right?

Sprinkle generously with powdered sugar - the berries are sour :) By the way, I mix in advance powdered sugar with starch - then the berry juice does not spread and the surface of the cake acquires a noble sheen :)

We send all this beauty to the oven at 180 degrees for 35-40 minutes

Ingredients:

Cooking:

1. Turn on the oven (180 degrees). Mix flour and other dry ingredients.

Dough:


  • 120 gr butter

  • 80 gr sugar

  • 1 egg

  • 150 gr flour

  • 60 gr potato starch

  • 1 tsp vanilla sugar

  • 1 tsp baking powder

Filling:

  • 250 g of a mixture of berries (I took - strawberries, blueberries and red currants)

  • 40-50 grams of water

  • 80 gr sugar

  • 40-50 gr potato starch

Decoration:

  • berries and powdered sugar

Cooking
1.Filling: Place berries, water and sugar in a saucepan. Gradually add starch, stirring constantly with a wooden spoon. When the mixture begins to boil a little - remove from the stove and put in a sink (or basin) with cold water to cool down faster.
2. Dough: beat sugar and butter. Add eggs one at a time, beating well each time. Through a sieve, gradually add flour, starch, vanilla sugar and baking powder. Knead the dough. Place the dough in the refrigerator for 30 minutes.
3. Cover the form with baking paper, grease with oil. Divide the dough into 2 parts. Spread one part on the bottom and sides of the form.
4. Put on the dough berry filling, flatten. Roll out the second part of the dough a little with a rolling pin and put it on the filling, slightly crushing it at the edge of the form with your fingers.
5. Preheat the oven to 175 C. Bake the pie for 45-50 minutes. at the bottom level. Cool down the cake
6. If desired, decorate with berries and powdered sugar.
